Some cheeses can be a downright nightmare to try and melt properly. This includes certain varieties of mozzarella cheese. Fortunately enough, if you’re trying to melt one of these “stubborn” cheeses, the microwave is the better way to go.
That doesn’t mean it will be easy, but it’s a better option than your oven’s broiler or using a double boiler on the stove. Also, picking a type of mozzarella with a higher fat content will make it easier to melt.

What to Know About Melting Mozzarella
The first thing to know before plopping a hunk of mozzarella in the microwave is that if you’re looking to make a cheese sauce out of it, you’re out of luck. Mozzarella just isn’t made to melt that way.
You can soften it and make it stringy or even gooey, though, and it’s perfect for making tasty snacks.
Low moisture content mozzarella is the easiest to melt, though fresh mozzarella can be melted in the microwave as well. It’ll just take longer and may come out with a slightly different consistency.
The Melting Process
To successfully melt your mozzarella, start by cutting it into small strips or pieces and placing them in a microwave-safe bowl. Now, set your microwave on half power and microwave the mozzarella in 15-second intervals.
After each interval, check to see if it’s the desired consistency, stir and continue to reheat. Continue to stir and heat until all of the mozzarellas melts evenly and is the desired consistency.
